Awadhi Mutton Biryani

This dish was made in India during the Mughal period and is now a favorite of mutton eaters. The aroma of this majestic Mutton Biryani cooked in the royal Awadhi style is perfect for your Bakrid meal.

To prepare this recipe…

  • Fry all the spices (cinnamon, cloves, cumin, fennel, coriander, black pepper, fennel, mace, black cardamom and cardamom) in a pan.
  • After roasting them, grind them finely.
  • Add ginger-garlic paste, turmeric and chilli powder for marination.
  • Add cashew paste, garam masala and curd as well.
  • Cover it with a lid and keep it in the fridge for an hour.
  • After the meat has come to room temperature, season the meat with salt.
  • Now grease the handi with a little ghee and oil and put the marinated meat in the handi.
  • Stir and cook the meat for a few minutes.
  • Cover with lid and simmer for half an hour.
  • Layer the mutton with the cooked rice, and pour some saffron mixed milk over it.
  • Add some salt, garam masala, fried onions and ghee over it.
  • Cover the handi with a lid and put something heavy on it.
  • Make sure the flame is low.
  • Cook for about half an hour and serve hot.

Sheer Khurma

Sheer Khurma is a traditional dish made on Bakrid. This is a new version of Vermicelli Halwa prepared for the celebration of Eid. ‘Sheer’ is a Persian word used for milk and ‘Khurma’ is a word used for dates.

To prepare the Sheer Khurma Recipe….

  • First of all, put some ghee on a hot griddle.
  • Then add almonds, pistachios and raisins to it and fry well.
  • Then take another pan, put some ghee in it and fry the vermicelli.
  • Then keep a vessel full of milk until it becomes thick and add sugar as per your choice.
  • Now add some dates and saffron along with dry fruits and vermicelli.
  • Cook till it thickens and add cardamom as well.
  • You can keep it in the fridge for a few hours and serve chilled.
