2 medium sized onions
1 large capsicum
1/4 cup chopped green beans
1/2 cup chopped cauliflower
1 teaspoon ginger paste
1 tablespoon fennel
1/2 tbsp coriander powder
1/2 tbsp dry mango powder
2 tbsp virgin olive oil
1/4 cup curd
1/4 tbsp asafoetida
2 medium sized tomatoes
1 large carrot
1/4 cup peas
1 tsp garlic paste
4 tbsp coconut powder
1/2 tbsp red chilli powder
1/4 tbsp garam masala powder
salt as required
1 small potato
1/2 tbsp cumin
prepare vegetables
Peel the vegetables and cut them into small pieces. Collect all separately.

Add coconut powder along with fennel seeds to the blender. Add curd and blend to make a thick paste.
roast vegetables
Heat oil in pressure cooker. Add asafoetida and cumin seeds and let them crackle for a few seconds. Add chopped onion, ginger paste, garlic paste and fry for two minutes. Now add chopped tomatoes to it and mix well. Cover the cooker with a lid and let the masala cook for 5 minutes.

Now add chopped potatoes, carrots, beans, cauliflower, capsicum and peas. Also add salt, red chili powder, coriander powder, dry mango powder and garam masala. Mix well. Add 1 cup water and close the lid. Pressure cook till 1-2 whistles.

Now open the lid and add coconut paste into it. Mix well and cook for 4-5 minutes.
ready to serve
Vegetable Kurma is now ready to serve. Eat it with rice or chapati and enjoy.
